I was wondering if that behaviour where tailor records have by default that “published” toggle is something existing we could add to regular models.

Although it looks simple, this is a complex control built in Vue. It is technically possible to use in models, but you would have to build it as custom code. We may look at introducing new “form views” in the future that include this type of thing natively, I have added this idea to our internal tracker.
