Update Tailor field after saving record

I ask for some guidance to update a field(s) of a Tailor content type, after saving the record on the GUI.
For example, let’s say a have “product” content type defined by a blueprint and I want to set the field “stock_level” to “low” after saving the record, if the “stock_number” field is less than 10.
What would be the best approach to accomplish this?
